Snack Time: Roasted Cauliflower Nachos Recipe

Do you love nachos, but are sick of feeling full and tired after eating them? Or would you like to have restaurant quality nachos in the comfort of your own home?
Don’t fret because the answer is here for you! Lettuce taco ‘bout this delicious and healthy Roasted Cauliflower Nacho recipe!! I’ve been making this light hearted snack for a couple of years now, it’s perfect to share with friends and is always a hit!! High key it’s a killer midnight munch, these photos may or may not have been taken during the wee hours of the morning!

Here’s how…


INGREDIENTS:

3 tablespoons of olive or avocado oil
1/2 teaspoon of taco seasoning (or chilli powder)
1/4 teaspoon ground cumin
1/2 teaspoon onion powder
Dash of garlic powder
1 head of cauliflower, chopped
1 medium sized fresh jalapeño pepper, chopped
1/2 a red onion, diced or chopped
1 can of beans, your choice (black beans or chick peas work well)
1/2 package of shredded Mexican cheese blend
1-2 avocados, diced or chopped
1-2 tomatoes, diced or chopped
1 jar of red salsa (I love the Herdez brand)
1 jar of green salsa (Ditto for this as well, salsa verde for the win)
1 package of whole grain nacho chips

Optional: 1/2 a container of non-fat plain Greek yogurt (as a substitute for sour cream)



PREP:

1) Preheat oven to 400°F.

2) Combine olive oil, taco seasoning, ground cumin, and onion powder in a bowl. Whisk to fully concentrate the ingredients. Set to the side.

3) Wash, chop, and dry cauliflower. Set to the side.

4) Dice red onion and chop jalapeño. Set to the side.

5) Wash, strain, and dry beans. Set to the side.

6) Combine beans and cheese in one bowl.

7) Coat the cauliflower with oil mixture. Place the cauliflower on an aluminum lined tray, in the oven for 15-20 minutes. Toasted brown is the way you would like the cauliflower to look.

8) Remove the cauliflower from the oven once it’s toasted, add in the bean and cheese mixture. Bake for another 4 minutes or so, you want the cheese nice and melty!

9) Add in your nachos, top it all off with the fresh red onions, tomatoes, and avocado. Serve with your salsa!

10) Voila, less than 10 steps and you’re done… Now time to relax and indulge a little. You deserve it!


*Prep should take about 20 minutes, with a total of 40-45 minutes
